Red Prawn Linguine

Red Prawn Linguine embodies the essence of Italian festive indulgence.

Made with sweet, succulent red prawns sourced straight from the Sicilian coast and bathed in a rich, savoury Mediterranean sauce, this dish bursts with vibrant, natural flavours!

To make a Red Prawn Linguine, you'll need the following ingredients:


Instructions

    1. Cook the Pasta:

         o  Bring a large pot of salted water to a boil.  

         o  Add the linguine and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta.  

    2. Sauté Garlic & Fresh Cherry Tomatoes:

         o  In a large pan, heat 2 tablespoons of extra virgin olive oil over medium heat.  

         o  Add the minced garlic and sauté until fragrant, about 1 minute.  

         o  Toss in the halved cherry tomatoes and cook until softened and juicy, about 5 minutes.

    3. Add Cherry Tomato Sauce & Build the Base:

         o  Add the cherry tomato sauce to the pan with the sautéed fresh cherry tomatoes. Stir well and let it simmer for 3-4 minutes to blend the flavors.  

    4. Cook the Red Prawns:

         o  Push the sauce to one side of the pan and add the red prawns. Cook for 1-2 minutes on each side, until they turn pink and tender. Remove the prawns and set aside.  

    5. Combine Pasta, Sauce & Prawns:

         o  Add the cooked linguine to the pan, tossing to coat it in the sauce. Drizzle with more red prawn oil and add a splash of reserved pasta water if needed to loosen the sauce. Return the cooked prawns to the pan and toss gently to combine.  

    6. Serve:

         o  Plate the linguine with prawns, garnish with freshly chopped parsley, and finish with a sprinkle of black pepper. Serve immediately.  

     

    Tips:

    • The combination of fresh cherry tomatoes and cherry tomato sauce creates a rich, layered flavour.
    • Red prawn oil adds depth and richness, so use it generously.  
    • Be careful not to overcook the prawns for the best texture.
